Pempek, also known as empek-empek, is a traditional Indonesian delicacy that originates from Palembang, a city in South Sumatra. It is a savoury fish cake made primarily from a mixture of fish paste (commonly tenggiri or Spanish mackerel) and tapioca flour, giving it a unique chewy texture.

Using locally sourced ingredients here in New Zealand we try our best to mimic the same taste from home.

Pempek is typically deep-fried and served with a tangy, sweet, and spicy tamarind-based sauce called cuko.

The sauce is made from a blend of palm sugar, tamarind, and chilli, which perfectly complements the richness of the fish cake.

Pempek comes in a variety of shapes and fillings, with some of the most popular types being:

  • Pempek Kapal Selam: Shaped like a submarine and filled with a whole egg.
  • Pempek Lenjer: Cylindrical in shape, without any filling.
  • Pempek Adaan: Fried fish balls mixed with coconut milk and spices.
  • Pempek Keriting: Curly, noodle-like in appearance.
  • Pempek Kulit: Made from the skin of the fish, giving it a crispier texture.

Pempek itself isn’t spicy, but the accompanying cuko sauce can range from mild to very spicy depending on how it’s prepared.

Our cuko sauce leans more towards the spicy end but can be diluted with water while still retaining its rich taste.

Yes, Pempek can be stored for later consumption. Our pempek comes in vacuum sealed bags and can be frozen for up to 1 year. Although we recommend enjoying it as soon as possible! Please refer to the product pages for each dish for more information.

When reheating, it’s best to fry or steam it before serving. The cuko sauce can also be stored in a sealed container in the fridge.
